Many commercial olive oils come from groves treated with chemical fertilizers that weaken the natural intensity of the olives. Our olive oil is sourced exclusively from organic-certified farms, where only natural fertilizers are used—ensuring a pure, unaltered taste.
For an olive oil to be classified as extra virgin, its acidity must be below 0.8%. Unfortunately, some mills blend low-acidity olive oils (0.5%) with higher-acidity ones (1.0%) to meet this standard—compromising taste and quality. We never mix our oils. Every batch of our extra virgin olive oil maintains a purity of 0.7% acidity or lower, ensuring an authentic, unblended flavor.
The time between harvesting and extraction is crucial. Delays lead to oxidation, which dulls the intensity of flavor and aroma.
